ENZYMES : Enzymes are needed for the digestive system to work. Enzymes have a very specific 3-dimensional structure in space called "tertiary structure". Heat as low as 118 degrees will disrupt this structure and render the enzyme useless. Once enzymes are exposed to heat, they are no longer able to provide the function for which they were designed. Once the enzymes have been exposed to heat (as low as 118 degrees) they become "denatured", meaning useless. It is therefore easy to understand that floating kibble does not have any enzymes to help the koi digest their food.
